Ingredients:
1 hen
1 head of celery, chopped in ½ inch pieces, leaves included
1 bunch of carrots
3 medium onions, chopped in quarters
1 shallot, chopped in thin slices
4 cloves of garlic
1 bay leaf
-chopped flat leaf parsley to add at the very end
-small shaped pasta/rice if desired.
Preparation:
Take hen (or chicken, which ever you have access to) out of the package; remove giblets and place in large pot. Fill up with water, leaving 6 inches from the top. Boil for 1 hour, covered. In the mean time, chop up celery, carrots, onions, shallot, and peel garlic cloves. After 1 hour, add it all in, along with the bay leaf. Boil, covered, for 1 additional hour. Carefully, take the hen out of the soup, and put it on a plate, pulling the meat off the bones, discarding the fat and cartilage. Make small shaped pasta and/or rice on the side to add in upon serving.
